Globecooking recipe : Alfajores Chilenos (Chili)


I've been working through the recipe booklets of my past Kitchen Trotter boxes to see if there are any that didn't get made and I came across this one. Alfajores are traditional Chilean cookies stuffed with dulce de leche. They're lovely but they do go dry very quickly so make sure they get eaten on the day they're made.

Alfajores Chilenos


ingredients :

1/2 a jar of dulce de leche
4 egg yolks
150g flour
3tbsp milk
1-2 tbsp rum (or add extra milk instead if you prefer)


Preheat the oven to 180°. Separate the eggs.


Mix together the egg yolks, milk and (if using) rum. Put the flour in a bowl, make a well in the centre and pour in the eggy mixture.


Stir to combine the ingredients then knead to create a nice ball of dough. Chill in the fridge for at least half an hour to make it easier to work with, if you have time.


Roll out until about 2-3mm thick. Cut out small discs with a cookie cutter.


Bake for 8-10 minutes until they are slightly golden and have gone a bit puffy.


I had a jar of shop-bought dulce de leche but you can make your own with condensed milk, if it's unavailable where you live. (Just Google for the instructions.)


Sandwich two biscuits together with a layer of dulce de leche in the middle.


They have a dry, crumbly texture and a fairly plain flavour, which perfectly complements the sweetness of the filling.

I think the kids had as much fun making them as they did eating them !

  1. These remind me of biscuits we used to get in France. No idea what they were called, we called them Mammoth biscuits as we got them at the Mammoth supermarket!

    1. oh wow, I'd forgotten all about Mammouth supermarkets - they don't exist any more, they were bought out by Auchan several years ago !
