Whitworths Sugar Baking Challenge recipe #2 : Crunchy Honeycomb


Yesterday I shared our family favourite recipe for Pineapple Upside Down Cake that we rustled up in the kitchen for the Whitworths Sugar Bloggers' Baking Challenge. Well, the second mission was to recreate one of Whitworth's own recipes. We decided to go for the Crunchy Honeycomb, because Sophie loved the fact that it said it was part cookery, part science experiment !


The ingredients list is surprisingly short :

200g WHITWORTHS GRANULATED SUGAR
4 tblsp golden syrup (we replaced this with honey)
1 tsp white wine vinegar
1 tsp vanilla extract
2 tsp bicarbonate of soda

PREPARATION METHOD
Caution: Extreme caution should be taken when making this recipe due to the high cooking temperatures required.

Generously oil a 30cm by 10cm baking tray.


Gently heat the WHITWORTHS GRANULATED SUGAR, syrup, vinegar and vanilla in a saucepan, stirring to combine.

Allow to dissolve completely and simmer for approximately 3 minutes without stirring until it is the colour of maple syrup.


Add the bicarbonate of soda and carefully whisk until fully combined.


The mixture will rise and bubble in the pan, so be very careful! Carefully pour the bubbling mixture into the prepared tin.


Leave to set.


When cool, break into pieces and serve. (Did you hear that Sophie ?!)



The honeycomb can be stored for a couple of days in an airtight container. (Not in our house it can't - the next day, it was all gone !) Ours was chewy rather than crunchy but I think it's because we used honey instead of  golden syrup - either way, it was totally delicious and the girls were very impressed that they had made "Crunchies" !

  2. Oh yummy, I was tempted by trying this one out for the challenge too but in the end went for the chocolate tray bake. I love the snap of your daughter with the whole lot ready to take a huge bite. So hard not to!

  5. I really struggled with this recipe. I failed twice and hubby had a go but it wasn't crunchy like it should be. Well done yours looks fab x

  6. we did this one too - it seems to be a popular choice, the first batch was chewy but I don't think I boiled it for long enough - the 2nd batch was fine.
